Top 10 Vegan BBQ Recipes

It’s that time of year again! The sun is out, your vacation days are set and the grill is ready to come out of hibernation. I have been hosting BBQ parties for years and have compiled a “Top 10” list for your convenience. Much of what is on the list is a variation of veggie kabobs, but I’ve also got some stuffed mushroom recipes to die for. Check out these vegetarian and vegan recipes below and leave any new ideas you have in the comments. Happy Memorial Day!

#1 Eggplant Bell pepper Mushroom Skewers

 

Eggplant

Preparation Time: 5 minutes / Cooking Time: 10  minutes / Serves: 8

Ingredients:

 

  • 1 large eggplant
  • 1 yellow bell pepper
  • 1 large white onion
  • 1 red bell pepper
  • 1 cup white button mushroom
  • Salt and pepper
  • 1 tbsp soy sauce
  • 1 tbsp vegan almond butter
  • 1 tsp rosemary

Instructions:

 

  1. Take 8 steel skewers.
  2. Cut the stem of the vegetables.
  3. Cut the vegetables into medium cubes.
  4. Thread the vegetables and mushrooms in the skewers.
  5. Combine the soy sauce, rosemary, salt and pepper in a bowl.
  6. Brush the skewers using the soy mixture.
  7. Brush the almond butter on the BBQ pan.
  8. BBQ for 5 minutes per side. Serve warm.

 


#2 BBQ Portobello Mushroom

Preparation Time: 5 minutes / Cooking Time: 10 minutes / Serves: 4

Ingredients:

 

  • 4 portobello mushrooms
  • 4 garlic cloves, minced finely
  • 2 tbsp parsley
  • 2 tbsp mint
  • 2 tbsp basil
  • 2 tbsp olive oil
  • 1 tbsp almond butter
  • Salt and pepper

Instructions:

 

  1. In a blender, add garlic, basil, mint, and parsley.
  2. Add olive oil and blend for 30 seconds.
  3. almond butter the BBQ pan with almond butter.
  4. Place the portobello mushrooms.
  5. BBQ for 3 minutes per side.
  6. Serve with the garlic pesto on top.

#3 Broccoli Carrot Bell Pepper Skewers

Preparation Time: 5 minutes / Cooking Time: 10  minutes / Serves: 12

Ingredients:

 

  • 1 cup broccoli florets with stem, roughly chopped
  • 1 cup carrots, sliced thickly
  • 1 cup red bell pepper, cut into thick cubes
  • 1 cup almond butternut squash, cut into thick cubes
  • Salt and pepper
  • 4 tbsp almond butter
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp garlic powder

Instructions:

 

  1. Take 12 wooden skewers and thread the vegetables.
  2. Combine the oregano, lime juice, rosemary, garlic powder, salt and pepper in a bowl.
  3. Brush the skewers using the mixture.
  4. Use aluminum foil to secure the bottom of the skewers. This will prevent extra charring.
  5. BBQ for 5 minutes per side.
  6. Brush the almond butter on top from time to time while cooking.
  7. Serve.

#4 Tofu Mushroom Zucchini Skewers

 

Onions

Preparation Time: 5 minutes / Cooking Time: 8 minutes / Serves: 10

Ingredients:

 

  • 2 large onions, cut into wedges
  • 1 cup button mushrooms
  • 1 cup tomatoes, cut into wedges
  • 1 cup bell pepper, cut into cubes
  • Salt and pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tsp rosemary

Instructions:

 

  1. Combine the rosemary, salt, pepper and garlic powder in a bowl.
  2. Thread the vegetables and mushrooms in skewers.
  3. Sprinkle the garlic mix generously.
  4. Brush half the olive oil on the BBQ pan.
  5. Place the  skewers and BBQ for 4 minutes. Brush the top and flip them.
  6. BBQ for 4 more minutes. Brush again with olive oil.
  7. Serve.

#5 Tofu Mushroom Zucchini Skewers

Preparation Time: 5 minutes / Cooking Time: 8 minutes / Serves: 8

Ingredients:

 

  • 1 cup tofu cubes
  • 1 cup mushrooms, halved
  • 2 zucchinis, cut into half moon shape
  • 1/2 cup red bell pepper, cut into cubes
  • 1 tbsp lime juice
  • Salt and pepper
  • 4 tbsp breadcrumbs
  • 2 tbsp almond butter
  • 1/2 tsp garlic powder

Instructions:

 

  1. Coat the tofu cubes in garlic powder and breadcrumbs.
  2. Thread the vegetables and tofu and mushroom in 8 skewers.
  3. Combine the lime juice, salt, pepper, and garlic powder.
  4. Brush the skewers using the mixture.
  5. BBQ for 3 minutes. Brush with butter and flip them.
  6. BBQ for 3 minutes again and brush with butter.
  7. Serve.

#6 BBQ Potato Skewer

Preparation Time: 5 minutes / Cooking Time: 12 minutes / Serves: 12

Ingredients:

 

  • 1 lb baby potatoes
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp smoked paprika
  • 2 tbsp olive oil
  • 4 tsp almond butter
  • Salt and pepper
  • 1 tsp rosemary
  • 1 tsp garlic powder

Instructions:

 

  1. Peel the potatoes.
  2. Thread the potatoes in skewers.
  3. In a bowl combine the olive oil with cumin, smoked paprika, salt, pepper, rosemary, garlic and mix well.
  4. Coat the baby potatoes in the spice mix.
  5. Brush the pan of the BBQ using butter. Place the skewers.
  6. BBQ for 6 minutes and brush with butter again.
  7. Flip the skewers and BBQ for 6 more minutesBrush one last time using butter and serve.

#7 Cheese Stuffed Mushrooms

Preparation Time: 5 minute / Cooking Time: 12 minutes / Serves: 10

Ingredients:

 

  • 10 portobello mushrooms
  • 1 cup potatoes, peeled, chopped
  • 1 cup vegan cheese, grated
  • 1 white onion, chopped
  • Salt and pepper
  • 1 tsp rosemary
  • 2 tbsp almond butter
  • 1 tsp oregano

Instructions:

 

  1. Clean the mushrooms and trim it finely.
  2. Combine the salt, pepper, rosemary and oregano.
  3. Combine the onion, potatoes and cheese in a bowl.
  4. Mix in the salt with the potato mixture.
  5. Coat the mushrooms using the almond butter.
  6. Stuff the mushrooms using potato mix.
  7. Place the mushrooms in a BBQ pan.
  8. BBQ for 8 minutes. Serve hot.

#8 Tomato Green Chili Sweet Potato BBQ

Preparation Time: 5 minutes / Cooking Time: 8 minutes / Serves: 4

Ingredients:

 

  • 1 cup tomatoes, sliced
  • 1 cup green chilies
  • 1 cup sweet potatoes, peeled sliced thickly
  • 1 tbsp lime juice
  • Salt and pepper
  • 4 tbsp almond butter
  • 1 tsp rosemary
  • 1 tsp garlic powder

Instructions:

 

  1. Combine the garlic powder, lime juice, rosemary, salt and pepper. Mix well.
  2. Coat the vegetables in a bowl.
  3. Let it marinate for 10 minutes.
  4. Place 1 tsp of almond butter on the rack of BBQ.
  5. Place the vegetables carefully.
  6. BBQ for 1 minute. Brush the top with almond butter.
  7. BBQ for 2 minutes. Brush again with almond butter.
  8. Flip the vegetables and BBQ for 3 minutes. Brush one more time with almond butter.
  9. Serve.

#9 Cheese Eggplant Rolls

Preparation Time: 5 minutes / Cooking Time: 6 minutes / Serves: 4

Ingredients:

 

  • 1 large eggplants
  • 7 vegan mozzarella cheese balls
  • 4 red olives, pitted
  • Salt and pepper
  • 1 tbsp almond butter
  • 1/2 tsp smoked paprika

Instructions:

 

  1. Cut the stem off the eggplant.
  2. Cut it into lengthwise slices. You will end up with 7 to 8 slices.
  3. Sprinkle some salt and pepper into the eggplants.
  4. Brush the BBQ pan with half of the almond butter.
  5. Place the eggplant slices. Sprinkle some salt and pepper.
  6. BBQ for 1 minute per side.
  7. Transfer to a plate. Place one cheese ball in the middle of each eggplant slice.
  8. Roll them tightly and use a toothpick to seal it.
  9. Sprinkle some paprika on top.
  10. Place them on the BBQ pan again. Brush the top using almond butter.
  11. BBQ for 2 minutes per side.
  12. Serve with olives on top.

#10 Broccoli Carrot Bell Pepper Skewers

Preparation Time: 5 minutes / Cooking Time: 10  minutes / Serves: 12

Ingredients:

 

  • 1 cup broccoli florets with stem, roughly chopped
  • 1 cup carrots, sliced thickly
  • 1 cup red bell pepper, cut into thick cubes
  • 1 cup almond butternut squash, cut into thick cubes
  • Salt and pepper
  • 4 tbsp almond butter
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tsp garlic powder

Instructions:

 

  1. Take 12 wooden skewers and thread the vegetables.
  2. Combine the oregano, lime juice, rosemary, garlic powder, salt and pepper in a bowl.
  3. Brush the skewers using the mixture.
  4. Use aluminum foil to secure the bottom of the skewers. This will prevent extra charring.
  5. BBQ for 5 minutes per side.
  6. Brush the almond butter on top from time to time while cooking.
  7. Serve.
